When clients need a creamy salty treat without the dairy, I turn to this sauce. I use it in my Mexican Casserole, with pasta, or as a sauce for veggies. For me, it is a comfort food that just hits the spot!
Ingredients 1/2 c butter 1/2 c flour (for gluten free, use a gluten-free flour mix, or rice flour) 3.5 c boiling water 1.5 t salt 2 T soy sauce or coconut aminos 1 pinch of turmeric 1 c nutritional yeast Optional (if you aren't avoiding alliums): 2 cloves fresh garlic Directions Put water on to boil In another saucepan, melt the butter over low heat Add flour and whisk in until mixture is smooth Add in water, stirring constantly Once thoroughly mixed, add soy sauce, salt, turmeric (and garlic, if including) Cook until thick and uniform Add nutritional yeast and stir to combine, cooking 1-2 more minutes Serve over pasta, veggies, nachos, etc...enjoy!
