When women are pregnant, they embody the elements of earth, water, and fire. Birth comes rather suddenly (for a life shift) and replaces these elements with air and space. Much traditional dietary advice for postpartum focuses on bringing earth, water, and fire back into a new mama's body.Â
Sweet potatoes are one of the best vegetables for this time of life! The sweetness and earthiness are sure to ground you as you get to know your baby, have unpredictable sleep, and recover from pregnancy and birth. If you'd like another delicious sweet potato recipe, check out my Healing Sweet Potato Stew! These pancakes are yummy plain or topped with more complex flavors. Bonus features: they can be eaten one-handed and kids love them too!
Sweet Potato Pancakes
Ingredients
6 c shredded Sweet Potato (about 2 large sweet potatoes)
1/3 c flour (I use quinoa flour and they are delicious - totally possible to do gluten-free)
2 eggs
1 t salt
1/4 t black pepper
high heat oil (I use avocado oil) for cookingÂ
Optional: 1/2 onion shredded
Optional toppings:Â pickles, ferments, mayonnaise, fried eggs, apple sauce, or yogurt.
Instructions
Put all ingredients (except toppings) in a large mixing bowl and mix well
Heat 2/3 T of oil in a skillet over medium heat
Scoop 1 heaping tablespoon of batter into clean hands and shape into a patty
Place patties in skillet and cook 7-10 minutes on each side, cooking until golden brown.Â
Serve with your favorite toppings, and enjoy the sweet earthiness of this dish!
