This recipe has been a favorite of many clients since I started making it 2 years ago. It started with an old friend passing along a recipe and me tweaking it into my own. Like all recipes I share, this one is simple to follow and doesn't include many ingredients. As the autumn days shorten, I hope this brings warmth to your belly and a smile to your face.
Healing Sweet Potato Stew
4 large garnet yams, or white Japanese sweet potatoes, chopped into 1" cubes 3T ghee, butter, or coconut oil 1" fresh ginger, grated or chopped finely 1" fresh turmeric root, grated or chopped finely 1c red lentils, soaked in water for 30 mins 1 can coconut milk 6-8 c water or broth salt to taste Melt ghee/butter/coconut oil in a soup pot. Add chopped ginger and turmeric, sautee until fragrant - careful not to burn it. Strain lentils and add to the pot, stirring to coat them with oil and spices. Add all the sweet potatoes and broth. Simmer everything slowly, stirring periodically, until the sweet potatoes start to fall apart. Add coconut milk and salt. Stir until well combined. Serve hot, in a beautiful bowl, to someone you love.
