New Mother's Kitchari!

This dish is a wonderful food for mamas anytime! It is grounding, warm, nourishing, easy to digest, and fills the house with a wonderful aroma. All my clients ask for more!

New Mother's Kitchari 1 c red lentils 3T ghee 1t black mustard seeds 1t cumin seeds 1t garam masala 1 pinch hing (asafetida) 1c basmati rice 5-6 c water or broth ½ - 1 c of any mixed vegetables, finely chopped (I like to use a combination of carrots, chard, green beans, and/or zucchini) 1 inch piece of fresh ginger, peeled and chopped finely or grated ½ t salt 1 handful of cilantro leaves, finely chopped & sliced lime for garnish

Rinse red lentils and rice twice. Pour lentils into a small bowl and cover with water; let soak for at least 30 mins. Drain.

Heat a large saucepan on medium heat . Add ghee, mustard seeds, cumin seeds, and hing. Once seeds pop, add lentils, rice, chopped vegetables, ginger, garam masala, and salt. Stir until evenly mixed.

Pour in water or broth and bring to a boil for 5 minutes. Turn down to a simmer and cover.

Cook, stirring occasionally for 1-2 hours until the rice and lentils turn to mush.

Garnish with cilantro and lime, and serve warm with a scoop of ghee on top!
