Butter Chicken Masala

Let the crock pot do the cooking. Mamas still need cooked, warm, nutrient-dense food, even when it is hot out. Butter chicken has great fat (butter, coconut milk), and warming digestive spices too! Mamas, papas, and older siblings will all enjoy this dish. This recipe is based on one I've used for years in one of my favorite slow cooker cookbooks, Make it Fast, Cook It Slow by Stephanie O'Day.

Butter Chicken Masala 2.5 lbs boneless skinless chicken thighs 1 onion, sliced 6 garlic cloves, chopped 1/2 t ground cardamom 2 t curry powder 2 t garam masala 1/2 t ground ginger 1/2 stick butter 1 can tomato paste, 6 oz 2 T lemon juice 1 can coconut milk, 14 oz salt to taste Put the chicken in the crockpot and sprinkle with salt. Add the sliced onion, garlic, and all the spices. Dump coconut milk, lemon juice and butter on top. Cover and cook on low for 8 hours, or on high for 4 hours. Serve over basmati rice. Yum!
